A local tavern that we frequent, serves deviled eggs very much like these. Every time we go, we order them as an appetizer, and I love that little hint of heat from the sriracha. Now when we’re really hungry for deviled eggs, I make a whole platter, so we don’t have to fight over them. 😉
Spicy Bacon Deviled Eggs Recipe
- 6 hard boiled eggs
- 3 tbsp real mayonnaise
- 1 tsp dijon Mustard
- 1 tsp apple cider vinegar
- 2 green onions chopped into small pieces (separate and reserve the green tops for garnish)
- 2 slices cooked bacon very crispy
- sriracha
- salt to taste
- smoked paprika
- fresh cracked pepper
Instructions
- Peel hard-boiled eggs, then using a sharp knife, slice eggs in half lengthwise. Carefully scoop out the yolks, reserving the egg whites halves.
- Place egg yolks in a bowl and mash with a fork. Add mayonnaise, mustard and apple cider vinegar to mashed egg yolks and mix until creamy.
- Stir in a tablespoon of chopped green onions into egg mixture.
- Add salt to taste.
- Refill egg white halves with the egg yolk mixture, adding a sprinkle of smoked paprika and fresh cracked pepper.
- Top each deviled egg with a piece of crispy bacon and crown with sriracha.
- Garnish with chopped green onion tops.
- Refrigerate deviled eggs until ready to serve. Store in the refrigerator up to three days.

Tips For Boiling Eggs
I find that bringing my pot of water to boil before adding my eggs, is better than, putting eggs in cold water and bringing to a boil. Once eggs are finished cooking I transfer to cold water, wait about 10 minutes then peel.
Using an egg timer is so helpful. This is the egg timer I use, the kind that sits in the boiling water and changes color as the eggs cook. It works like magic, and the results are perfect boiled eggs every time.
