If you like peaches you’ll love this easy grilled peach crostini recipe I’m sharing today. Every summer we look forward to going to the peach farm for fresh picked peaches. It’s also a pleasant way to get out of the city. We enjoy the change of scenery and then we talk about our favorite peach recipes all the way home.
July Pinterest Challenge
It’s time for our July Pinterest challenge, and this month we’re sharing our favorite peach recipes. You may not be hungry now, but you will be after seeing all of these appetizing desserts, snacks and appetizers.
If this is your first time to join us for a Pinterest challenge, this is how it works. Our host Cindy over at County Road 407, selects a photo for us to recreate, and each participant puts their own spin on the photo. The exception this time is that we’re in the kitchen whipping up recipes instead of decorating.
If you’re stopping by from The House On Silverado, welcome to Thistle Key Lane. Niky’s peach almond breakfast cookies look amazing to me!
Our inspiration this month is from Organic Facts, and I think you’ll enjoy reading their post on the Health Benefits & Nutrition Of Peach. There’s a lot more to this pretty fruit than I realized, which makes total sense. Why else would we say “I’m feeling peachy” or “I’m peachy keen”?
I mean how can you feel pretty on the outside, if you don’t feel good on the inside in the first place? Food for thought!
Our peachy adventure takes us to the Hutton Peach Farm west of Weatherford, Texas which is not too far from Ft. Worth. We were there just before noon, when they were sorting peaches that were picked that morning. Now that’s what I call fresh!
For this post we’re making a savory recipe, and I love the blend of flavors of this crostini with peach, prosciutto, basil, feta and balsamic. Pair it with a smart cocktail or glass of wine, and you have an incredible appetizer or light meal.
Grilled Peach Crostini Recipe
- 4 peaches cut in half
- 1 French baguette sliced 1/3″ to 1/2″ thick
- 1/3 cup olive oil
- fresh basil leaves
- 3 oz. package thin sliced prosciutto
- 4 oz. container feta cheese
- aged balsamic vinegar or balsamic reduction
- Wash peaches throughly to remove all the peach fuzz and set aside.
- Brush both sides of the baguette slices with olive oil and toast to a light golden brown.
- Slice peaches in half and remove the pit. Then lightly brush the cut side only with olive oil.
- Preheat gas grill to 400°F. Place peaches cut side down and grill for about 3 to 5 minutes and remove.
- Slice grilled peaches into wedges.
- Place prosciutto, basil and peach on toasted baguette slices, and top feta cheese and drizzle with balsamic.
Recipe Notes
I use a silicone brush to lightly apply olive oil to the bread and peach slices, however you can also use vegetable or olive oil cooking spray.
Serving Suggestions For Grilled Peaches
Easy substitutions for your grilled peach crostini recipe includes arugula for basil, and crumbled goat cheese instead of feta.
For a special dessert, serve grilled peaches with vanilla ice cream and toasted pecans or slivered almonds.
Grilled peaches make a delicious and beautiful addition to a green salad with pine nuts, feta and balsamic vinaigrette.
