GRILLED PEACH CROSTINI RECIPE
A delicious grilled peach crostini appetizer with thin sliced prosciutto, basil, feta and balsamic.

Ingredients
4
peaches cut in half
1
French baguette sliced 1/3" to 1/2" thick
1/3
cup
olive oil
fresh basil leaves

package thin sliced prosciutto
4

container feta cheese
aged balsamic or balsamic reduction
Instructions
Wash peaches throughly to remove all the peach fuzz and set aside.
Brush both sides of the baguette slices with olive oil and toast to a light golden brown.
Slice peaches in half and remove the pit. Then lightly brush the cut side only with olive oil.
Preheat gas grill to 400°F. Place peaches cut side down and grill for about 3 to 5 minutes and remove.
Slice grilled peaches into wedges.
Place prosciutto, basil and peach on toasted baguette slices, and top feta cheese and drizzle with balsamic.
Notes
I use a silicone brush to apply olive oil to the bread and peach slices, however you can also use vegetable or olive oil cooking spray.
