The best lemon squares recipe is right here! Pretty bold statement I know, but I make them just like my mom did and they’re always delicious. Of course you know it also has to be a simple recipe to get my seal of approval.

Lemon squares only take a few steps to make and have a lovely presentation. When you bring these to your office potluck party or family gathering, you can expect to bring home an empty dish. No one can resist the light crumbly crust and a lemon filling that has just enough sweetness to satisfy.
Lemon Squares Recipe
- 1 cup flour
- 1/2 cup unsalted butter at room temperature
- 1/4 cup powdered sugar
- 2 eggs
- 1 cup granulated sugar
- 2 tbsp fresh squeezed lemon juice
- 1 tsp lemon zest
- Preheat oven to 350ºF.
- Combine flour, butter and powdered sugar. Mix well and press into the bottom of a 8×8 square baking pan making sure the bottom of the pan is completely covered. Place in 350 oven for 15 minutes.
- While crust is baking mix together eggs, granulated sugar, fresh squeezed lemon juice and lemon zest. Pour mixture evenly over crust and return to the oven for 25 minutes.
- Remove from oven and cool on a wire rack. Top with lemon glaze. See recipe below.
Lemon Glaze For Lemon Squares
- 1/4 cup powdered sugar
- 1 tsp fresh squeezed lemon juice
- 1 tsp water
Make a glaze by mixing sugar, lemon juice and water. Spread a thin layer of lemon glaze over the top of the lemon squares. Cut into squares and serve.
Recipe makes 25 squares when cut in about 1-1/2 x 1-1/2 inch rows.
Recipe Tip
Follow this tip for an easy way to remove the batch of lemon squares from the pan. Cut a piece of parchment paper the same width of the pan and just long enough to barely stick up over the top edge. Grease sides and bottom of pan with a little butter then place parchment paper on top. Spread flour mixture on top of paper and continue with the recipe.
After the lemon squares are cool, use a knife to loosen around the edge and then lift the paper to remove the lemon squares. Cut into squares and serve.

Oh Yuuummm! These look mouth-wateringly delicious, Michelle! Definitely adding this recipe to my lemon repertoire! We love all things lemon and it goes with spring. I use the parchment trick all the time – so much easier to cut squares neatly when they are out of the pan – and it saves the pans from getting scratched up too!
Michelle Meyer says
Good point Janet, I hate scratching up pans and this trick really helps.
