Lemon Squares Recipe

Lemon Squares have a light crumbly crust and a lemon filling that has just enough sweetness to satisfy.

Ingredients
  

  • 1 cups flour
  • 1/2 cup unsalted butter room temperature
  • 1/2 cup powdered sugar
  • 2 eggs
  • 1 cup granulated sugar
  • 2 tablespoons fresh squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup powdered sugar Reserve For Glaze
  • 1 teaspoon fresh squeezed lemon juice Reserve For Glaze
  • 1 teaspoon water Reserve For Glaze

Instructions
 

  • Preheat oven to 350ºF.
  • Combine flour, butter and powdered sugar. Mix well and press into the bottom of a 8x8 square baking pan making sure the bottom of the pan is completely covered. Place in 350 oven for 15 minutes.
  • While crust is baking mix together eggs, granulated sugar, fresh squeezed lemon juice and lemon zest. Pour mixture over crust and return to the oven for 25 minutes.
  • Remove from oven and cool.
  • Make a glaze by mixing sugar, lemon juice and water. Spread a thin layer of lemon glaze over the top of the lemon squares.
  • Cut into squares and serve.
