Saturday morning, I made an old recipe called Cowboy Coffee Cake. It always reminds me of my dad because he was a cowboy in his youth. It seems like I made it for him, every time he came to visit.

Biscuits and a few ingredients
Cowboy Coffee Cake
- 2 packages of 12 oz. biscuits (flaky biscuits are best)
- 1/2 cup packed brown sugar
- 1/3 cup chopped pecans
- 1 tablespoon cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon nutmeg
- 6 tablespoons butter melted
Prepare a 9″ iron skillet with a light coating of butter. A 9″ cake pan with non-stick spray works just as well. Place biscuits in the pan overlapping each other. Combine the brown sugar, pecans, spices and melted butter, then spread over the biscuits. Bake at 350°F for about 25 minutes or until the center is done.

Crunchy sweet butter flavor
The crunchy sweet butter flavor is mostly on top, but I kind of like it that way. Besides I could eat biscuits all day long, even if they are plain! Adding some cheese on the side, such as aged gouda or fruit will help you feel less guilty for enjoying this simple recipe.
