Everyone loves the tender shredded chicken, and the delicious spicy flavor of buffalo sauce with celery and onion. Plus it’s so easy to heat and serve on Hawaiian rolls.

It’s Pinterest Challenge time and we’re sharing our favorite Super Bowl or game day recipes. This group really knows how to whip up the best recipes, so I’m sure you will find lots of delicious dishes to try.

The exception this month is that we’re in the kitchen whipping up recipes instead of decorating.

Fair warning this recipe does not include cream cheese or shredded cheese or sliced cheese. Shocking I know! I’m a true cheese lover however In this case, I’m leaving it out so the taste of the chicken and the spiciness of the buffalo sauce are the main favor points.
Easy Buffalo Chicken Sliders Recipe
- 1 package sweet Hawaiian type rolls (sliced horizontally)
- 1.25 lb. cooked shredded chicken
- 3/4 cup buffalo sauce
- 1/2 cup mayo
- 2 tbs. ranch dressing
- 2 celery stalks finely chopped
- 3 green onions finely chopped (separating and reserving the green tops for garnish)
- 2 tbs. melted butter
- Pre-heat oven to 350°F. Line a rectangle baking dish with parchment paper or foil.
- Combine buffalo sauce, mayo and ranch dressing in a medium size bowl then whisk until creamy.
- Stir in celery pieces, green onion pieces and shredded chicken.
- Carefully slice rolls horizontally and set roll tops aside.
- Place bottom half of rolls in a parchment lined baking dish. Spoon on the buffalo chicken mixture to cover the bread then place roll top over chicken mixture.
- Brush melted butter over the top of rolls and sprinkle with the green onion tops.
- Place in a pre-heated oven 350°F for about 10 to 15 minutes.
- Remove and carefully separate the sliders with a sharp knife for easy serving.
Recipe Notes:
One reason why this recipe is such a hit is because I use boneless skinless chicken thighs. I cook the chicken thighs in my instant pot for about 25 to 30 minutes. The chicken is always super tender, and shreds effortlessly with a fork.
To save a few calories you can substitute avocado or olive oil mayo for about half the calories as regular mayo. You can also change up the recipe using regular size slider buns, just in case you can’t find sweet Hawaiian type rolls.
As I pointed out earlier this recipe does not include cheese. However you know what I always say about recipes…make it like you like it. So if you want to add shredded or sliced cheese, try it both ways to see what you like best.
Serving Suggestion
Simple serving, lift the parchment paper with the sliders out of the baking dish and place on a tray. I find it’s easier to separate the sliders with a sharp knife.
For the perfect accoutrement to you sliders, add a bowl of blue cheese dressing, celery sticks and cheery tomatoes. Now we’re talking!
