Today I’m sharing an apple pecan bread pudding recipe that is deliciously light. I always look forward to all the different ways of baking apples this time year. How about you?
Bread Pudding
This recipe is a little different from a traditional bread pudding because it doesn’t have eggs, milk or cream. That’s why I don’t feel too guilty about serving it with a scoop of ice cream on the side.
If you love apples and cinnamon toast with butter and sugar, then this recipe may become one of your favorites.
Apple Pecan Bread Pudding Recipe
- 4 large Granny Smith apples peeled and cut into 1/2″ slices
- 1 cup brown sugar firmly packed
- 1 tablespoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup pecan pieces (optional)
- 1/3 cup unsalted butter melted
- 4 cups bread cubes about 1 inch square
- 1 cup apple cider
- Preheat oven to 350°F
- Mix together brown sugar, cinnamon and nutmeg in a bowl.
- In a large bowl toss about half of the sliced apples with about a third of the brown sugar mixture. Repeat with the remainder of the apples along with the pecan pieces.
- In a separate bowl toss bread cubes with melted butter, then add the remaining brown sugar mixture and toss to coat.
- Combine bread cubes and apples. Spoon into a lightly greased 11″x7″ baking dish. Pour apple cider over the top of apple and bread mixture.
- Bake for about 50 to 55 minutes or until golden brown on top.
- Let cool for 5 to 10 minutes before serving.
Recipe Suggestions
Apple pecan bread pudding can also be baked in a 10″ iron skillet or Dutch oven, if you don’t have a 11″x7″ baking dish.
After slicing apples I like to drizzle a little fresh squeezed lemon juice on top to prevent the apples from turning brown. Totally optional.
You can use white bread, whole wheat bread or any kind of rustic bread you like in this recipe.
Serve warm with a scoop of ice cream on the side or a dollop of whipped cream on top.
