Blueberry Season
It’s officially summer, which means it is also blueberry season at Thistle Key Lane. We have blueberry bushes growing in containers on the patio, and a few more planted in the backyard. I love picking blueberries as they ripen, and of course, I can’t resist eating them on the spot.

With July 4th celebrations approaching quickly, this is the perfect time to share my star blueberry hand pies recipe. As you are probably already guessing I’m using our home-grown blueberries. Don’t you just love how adorable and delicious these little stars look on the tray? So simple, yet so festive!
Star Blueberry Hand Pies Recipe
Ingredients
- 2 cups blueberries
- 1/2 cup granulated sugar
- 1 tablespoon corn starch
- zest of 1 small lemon
- juice of 1 lemon
- sugar for sprinkling (course sugar optional)
- 2 store-bought pie crust
- 1 egg
Instructions
Pre-heat oven to 400° F.
- Combine blueberries, sugar, cornstarch, lemon zest and lemon juice in a sauce pan. Stir on medium high heat until thickened.
- Remove from heat and let stand at room temperature.
- Roll out the pie crust following the brands instructions.
- Cut as many stars in the dough as possible, reworking the dough and rolling out as needed.
- Remember you will need two stars (a top and bottom) for each hand pie.
- Whisk one egg in a small bowl, and set aside to use for assembling the hand pies.
- Place a spoonful of the blueberry sauce in the center of each star.
- Dip your finger into the egg wash, to apply a little around the edge of each star to help seal before placing the other star on top.
- Press edges of dough together with a fork to seal.
- Place blueberry hand pies on a parchment lined baking sheet. Cut a slit in the top of each hand pie with a sharp knife to allow steam to escape while baking. Sprinkle with sugar.
- Bake at 400°F until golden brown for about 20 to 25 minutes. Remove from oven and place hand pies on a wire rack to cool.
Recipe Notes
When I make blueberry sauce, I always have more than I need for this recipe. So I simply spoon the leftovers into a jar with a lid, and store in the fridge to use as a dessert topping. Yum!
While regular granulated sugar works fine to sprinkle on top of your hand pies, course sugar will make a prettier presentation. Just thought I would mention that to add to your grocery list, since I forgot. 😉

Yes frozen blueberries work great! I use frozen blueberries for lots of my recipes in the fall.

And I am so glad you used a store-bought pie crust. I always look at the ingredient list first, and if it’s more than 4 or 5 things or items not already in my pantry, I’m out. lol. Although I don’t count an extra egg or sprinkles. 😉
On another note, what pie crust brand do you use? Rolled out, it looks so white. I want that! It looks more pliable and softer than the brand I use.
