Roasted Almonds
We enjoy almonds year around as a healthy snack, but I love being able to offer something a bit more special when entertaining.
If you love rosemary, you’ll love the intoxicating aroma in your kitchen when making a batch of roasted almonds. Everyone in the house will stop what they’re doing, seeking for a nibble or two.

Roasted Rosemary Almonds Recipe
- 3 cups raw almonds
- 2 tablespoons olive oil
- 2 tablespoons rosemary finely chopped
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon kosher salt
- Pre-heat oven to 350°F. Line a sheet pan with foil or parchment paper and set aside.
- Combine olive oil, rosemary, paprika, onion powder and salt in a large bowl.
- Add almonds and toss with the olive oil mixture until coated.
- Evenly spread almonds on lined baking sheet and place on the middle rack in the oven.
- Bake for about 15 minutes.
- Remove from oven. Sprinkle with additional salt if desired.
- Allow to cool and dry out a little for about 1 – 2 hours before storing in an air tight container.
Recipe Notes
For spicy almonds add 1/4 teaspoon cayenne pepper to the olive oil mixture.
I’m a bit conservative with salt in this recipe, and that’s why I suggest sprinkling additional salt after removing them from the oven.
Adapt this recipe for cashews, peanuts or your favorite mixed nuts combination.
