Oatmeal Flax Quinoa Cookie Recipe includes ingredients that are considered superfoods and therefore a healthy snack. Coming up with the name for such an amazing cookie is a bit tricky. Naturally I want the name to reflect what it’s made of, but my daughters suggestion of “yummy delicious magic cookies” sounds pretty good too.

I love the idea of making a snack with quality ingredients that are high in protein and fiber, and also one that satisfies my sweet tooth.
Did I mention these cookies are also really delicious? Every time I make a batch they are usually gone within a day or two. That tells me I’m must be on the right track.
Oatmeal Flax Quinoa Cookie Recipe
- 1-1/4 cups oats (gluten-free)
- 1 tbsp. flax-seed powder
- 1 tbsp. quinoa
- 1 tsp. chia seeds
- 1/2 tsp. baking powder
- 1/2 cup light brown sugar
- 1 cup peanut butter (I used Jif Natural)
- 2 eggs
- 2/3 cup dark chocolate chips (dairy free)
- 1/2 cup chopped walnuts
- 1 tsp. vanilla extract
- sea salt (optional)
Pre-heat oven 375°F
- Combine the first six ingredients
- Stir in peanut butter, then beaten eggs and vanilla extract, mixing well
- Add in chocolate chips and chopped walnuts, stir until combined
- Drop by spoonful on a parchment lined baking sheet. If desired sprinkle lightly with sea salt.
- Bake for about 12-13 minutes. Remove and let cool.
Recipe makes 24 to 28 cookies.

In order to make this recipe dairy free, look for organic chocolate chips without milk or milk fat.
For a gluten-free recipe use oats with a gluten-free label, since not all oats are guaranteed not to have trace amounts of wheat.
Flax seeds can be used instead of flax seed powder if you prefer. I make them both ways, but I think flax seed powder mixes in better.
Swap out ingredients depending on your preferences, such as pecans for walnuts or semi-sweet chocolate chips for dark chocolate.
Store cookies in the freezer when making several batches.
