OATMEAL FLAX QUINOA COOKIE RECIPE

Oatmeal Flax Quinoa Cookies are made with super food ingredients that are delicious. This is a must try recipe for a healthy snack.
Servings 24 cookies

Ingredients
  

  • 1-1/4 cups oats gluten-free
  • 1 tablespoon flax-seed powder
  • 1 tablespoon quinoa
  • 1 teaspoon chia seeds
  • 1/2 teaspoons baking powder
  • 1/2 cup light brown sugar
  • 1 cup peanut butter I used Jif Natural
  • 2 eggs
  • 2/3 cup dark chocolate chips dairy free
  • 1/2 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • sea salt optional

Instructions
 

  • Pre-heat oven 375°F
  • Combine the first six ingredients
  • Stir in peanut butter, then beaten eggs and vanilla extract, mixing well
  • Stir in chocolate chips and chopped walnuts
  • Drop by spoonful on a parchment lined baking sheet. If desired sprinkle lightly with sea salt.
  • Bake for about 12-13 minutes. Remove and let cool.
