OATMEAL FLAX QUINOA COOKIE RECIPE
Oatmeal Flax Quinoa Cookies are made with super food ingredients that are delicious. This is a must try recipe for a healthy snack.
- 1-1/4 cups oats gluten-free
- 1 tablespoon flax-seed powder
- 1 tablespoon quinoa
- 1 teaspoon chia seeds
- 1/2 teaspoons baking powder
- 1/2 cup light brown sugar
- 1 cup peanut butter I used Jif Natural
- 2 eggs
- 2/3 cup dark chocolate chips dairy free
- 1/2 cup chopped walnuts
- 1 teaspoon vanilla extract
- sea salt optional
Pre-heat oven 375°F
Combine the first six ingredients
Stir in peanut butter, then beaten eggs and vanilla extract, mixing well
Stir in chocolate chips and chopped walnuts
Drop by spoonful on a parchment lined baking sheet. If desired sprinkle lightly with sea salt.
Bake for about 12-13 minutes. Remove and let cool.
