I love to celebrate St. Patrick’s Day, but I don’t necessarily decorate my home for the holiday. Instead I’m usually focusing on special treats, traditional Irish food or cocktails. How about you?
St. Patrick’s Day Treat
I have to admit dark chocolate and I have an exceptionally good relationship. So as you can guess, I love making dark chocolate bark. Just add some roasted almonds, along with some colorful sprinkles, and you have an extra special treat.
In honor of St. Patrick’s Day, I’m using rainbow nonpareils, two shades of green sprinkles in different shapes, and gold sequin sprinkles that look like coins. How fun is that?

Rainbow Dark Chocolate Bark Recipe
- 10 oz. dark chocolate chips
- 1/2 cup roasted almond pieces
- rainbow nonpareils
- green sprinkles
- light green pearl sprinkles
- gold sequin sprinkles
- Before you start gather your supplies such as a microwave safe bowl, rubber spatula, sheet pan and foil.
- Line a sheet pan with foil and have your toppings ready.
- Heat dark chocolate chips in a microwave safe bowl following manufacturers directions. I like using a large pyrex measuring cup (32 ounce size) with a handle.
- Stir chocolate making sure it is smooth and all the chips are melted.
- Pour onto a foil lined pan and gently spread out chocolate with the spatula.
- Quickly scatter almond pieces, rainbow nonpareils, and assorted sprinkles on the chocolate while it’s warm. This will allow the toppings to stick to the chocolate.
- Place the sheet pan in the refrigerator for 30 minutes to an hour and allow it to set. Remove from refrigerator and break up the chocolate into smaller pieces.
- Store in an airtight container or plastic bag in the refrigerator.
Recipe Notes:
Follow the same directions above if you prefer the sweeter taste of milk chocolate chips.
If you are looking for dairy free dark chocolate there are manufacturers that make it without milk, so be sure to check the labels. One of the reasons why I like making my own dark chocolate bark, is that I can make it dairy free.

Notes
Do you like celebrating Mardi Gras? I’m thinking rainbow dark chocolate bark will work for Fat Tuesday too. Just switch out the light green pearl sprinkles for purple sprinkles and you’re all set!
