Old Recipes Stand The Test Of Time
There are many old recipes that stand the test of time, and this is one of them. Before the Mister and I were married way back in the 80s, the ladies in our church gave me a recipe shower. This is one of those recipes I have treasured ever since, and always look forward to making. I think you will enjoy it too, and if you want a beautiful presentation, serve it in a trifle bowl if you have one.
This is the kind of recipe I highly recommend for pot luck dinners, and holiday get-togethers any time of the year. I can remember taking this salad to office luncheons, and always came home with a clean bowl. So don’t be surprised if you are asked to make it over and over again for years to come.
Green Pea Layered Salad Recipe
- 5 oz. lettuce or spinach
- 8 slices bacon cooked and crumbled
- 6 large eggs hard boiled and chopped
- 1 10 oz. package frozen green peas thawed
- 6 green onions chopped
- 2 stalks celery chopped
- 1 cup cherry tomatoes quartered (optional)
- 12 oz. mayonnaise
- 1 tbs. granulated sugar
- 1/2 cup cheddar cheese shredded
- salt and pepper to taste
- In a large clear bowl or trifle bowl layer the first 3 ingredients starting with the lettuce, bacon and eggs. Add salt and fresh cracked pepper.
- Continue layering with the next 5 ingredients green peas, green onions, celery and cherry tomatoes in that order. I don’t always include cherry tomatoes in this recipe, so I’m listing them as optional.
- Combine mayonnaise and sugar and cover the top of the salad. Sprinkle with cheddar cheese and more cracked pepper. Cover with plastic wrap and store in the refrigerator until ready to toss and serve.
Recipe Notes
- The layered salad can be made the night before or early in the day, however don’t toss the salad until you’re ready to serve it.
- Sometimes I make this recipe with red onions instead of green onions, so it is up to you on which one you prefer.
- You can also make it with spinach or romaine instead of mixed salad greens.
