Apple spice bundt cake is a classic family recipe that’s always a big hit. Of course it’s an excellent dessert any time of year, but it’s one that I associate mostly with Christmas.
You’ll want to keep this recipe handy for holiday get-togethers. It’s easy to wrap up and transport too.
The big secret to this delicious apple spice bundt cake recipe is in the very first step. Mixing the chopped apples with sugar and pecans in order to release the juices of the apples, makes this an extra moist cake.
Granny Smith apples are always a good choice for baking, however you can use other varieties. This time I’m mixing Honey Crisp apples with Granny Smith apples just to see how I like it.

- 4 cups apples peeled and chopped
- 2 cups sugar granulated
- 1 cup pecans chopped
- 3 cups flour all-purpose
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/4 teaspoon cloves
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 eggs large
- 1 cup vegetable or canola oil
- 1 teaspoon pure vanilla extract
- Combine chopped apples, sugar and pecan pieces in a large bowl and let sit for 1 hour. Stir often to let the juice of the apples release. This is an important step in achieving a moist cake.
- Pre-heat oven 350º F. Grease and flour bundt pan or use baking spray.
- Combine flour, cinnamon, nutmeg, allspice, cloves, baking soda and salt in a bowl then add to apple mixture.
- Add oil and vanilla to beaten eggs, then stir into the apple and flour mixture.
- Pour cake batter into a prepared bundt pan.
- Bake at 350º F for 50 to 60 minutes.
- Let cake cool for about 5 minutes, then invert onto a cooling cake rack
- Cool completely before adding the vanilla powdered sugar glaze below.
Vanilla Powdered Sugar Glaze
- 1-1/2 cups powdered sugar
- 2 to 3 tablespoons milk
- 1 teaspoon pure vanilla extract
- Stir powdered sugar, milk and vanilla until creamy.
- Place wire rack with cake, on top of a sheet of parchment paper and drizzle glaze over the top of cake. I like to use a small whisk or fork for delicate ribbons of glaze.

This looks so yummy; perfect for fall and Christmas. It’s similar to a family recipe, but we’re lazy and leave the apple skin on. I haven’t fixed it in ages, but now I know I will. Have a great weekend ahead!
