Roasted Rosemary Almonds Recipe

This Roasted Rosemary Almonds Recipe turns plain almonds into a fancy appetizer perfect for serving at dinner parties or with cocktails. Make a batch for yourself or several batches to give as hostess gifts any time of year.

We enjoy almonds year around as a healthy snack, but I love being able to offer something a bit more special when entertaining.

 

 

If you love rosemary, you’ll love the intoxicating aroma in your kitchen when making a batch of roasted almonds. Everyone in the house will stop what they’re doing, seeking for a nibble or two.

Roasted Rosemary Almonds Recipe

  1. Pre-heat oven to 350°F. Line a sheet pan with foil or parchment paper and set aside.
  2. Combine olive oil,  rosemary, paprika, onion powder and salt in a large bowl.
  3. Add almonds and toss with the olive oil mixture until coated.
  4. Evenly spread almonds on lined baking sheet and place on the middle rack in the oven.
  5. Bake for about 15 minutes.
  6. Remove from oven. Sprinkle with additional salt if desired.
  7. Allow to cool and dry out a little for about 1 – 2 hours before storing in an air tight container.

Recipe Notes

For spicy almonds add 1/4 teaspoon cayenne pepper to the olive oil mixture.

I’m a bit conservative with salt in this recipe, and that’s why I suggest sprinkling additional salt after removing them from the oven.

Adapt this recipe for cashews, peanuts or your favorite mixed nuts combination.
