Banana Nut Muffin Recipe (Gluten-Free Option)

- 1 cup granulated sugar
- 1/2 cup unsweetened applesauce
- 1 tbsp vegetable oil
- 2 eggs
- 1 cup mashed bananas
- 1-1/2 cups all-purpose flour or gluten-free baking flour with xanthan gum
- 1 tsp ground nutmeg
- 1 tsp ground cinnamon
- 2 tsp hot water
- 1 tsp baking soda
- 1 tsp pure vanilla extract
- 1/2 cup chopped walnuts
Pre-heat oven to 350°F. Grease muffin pan or use muffin liners. Recipe makes 12 to 18 muffins.
Combine sugar, applesauce and vegetable oil
Add eggs and mashed bananas, mix well
Stir in flour, nutmeg and cinnamon
In a separate small bowl dissolve baking soda in hot water, then add to banana mixture
Add vanilla extract and chopped walnuts
For over the top muffins fill muffin cups 3/4 full makes about 12 muffins, for regular size muffin fill muffin cups 1/2 full
Optional top with additional chopped walnuts
Bake for 18 to 20 minutes
