Do you have a favorite magazine you go to for inspiration? One of mine is Country Living. If I’m not drooling over the decor, I’m usually drooling over the recipes. I throughly love reading it cover to cover with a cup of coffee or a glass of wine, it doesn’t really matter.
In the September issue, I found two easy appetizer recipes that looked delicious and only required a few ingredients. Keep reading for the details on how to make Bacon Lettuce Cups and Chorizo & Manchego Crostini.
Bacon Lettuce Cups
Fill bib lettuce leaves with sliced red and yellow tomatoes. Add cooked bacon pieces tossed with a little wing sauce. (A little goes a long way.) Top with crumbled blue cheese. Garnish with sea salt and fresh cracked pepper.
If you want to add extra heat to your bacon lettuce cups, dribble a few extra drops of wing sauce on each one or serve on the side. So good!
Bacon lettuce cups can be made earlier in the day, just cover and keep in the fridge until ready to serve.
Chorizo And Manchego Crostini
Add a dollop of apricot jam or preserves on each crostini. Top with thinly sliced chorizo and Manchego cheese. Garnish with freshly chopped parsley.
The secret to this recipe is the apricot jam. The flavor combination is amazing.
Prepare and organize your ingredients early in the day, then assemble before guests arrive.
Prosciutto Wrapped Apple And Gouda
Slice an apple into wedges, add a thin slice of gouda, then wrap with prosciutto. Pears and brie also match well with proscuitto.
Follow this tip to keep apples from turning brown. Squeeze a fresh lemon onto a small plate, then dip each side of the apple slice in the lemon juice. Works every time.

Serving Suggestions
Depending on the appetizers, I like to use a mixture of platters or boards on the table. Here are a few serving suggestions to try.
Follow Thistle Key Lane on Pinterest where the boards are update daily with inspiration for you!
The winning combination of these appetizers comes from the mixture of flavors in the fresh ingredients. No guilty feelings from enjoying these recipes either, I might add.
Enjoy with family, friends and your beverage of choice!
Cheers!
