ROASTED ROSEMARY ALMONDS RECIPE

Ingredients
  • 3cups raw almonds
  • 2tablespoons olive oil
  • 2tablespoons rosemary finely chopped
  • 1teaspoon Smoked Paprika
  • 1/2teaspoon onion powder
  • 1/2teaspoon kosher salt
Instructions
  1. Pre-heat oven to 350°F. Line a sheet pan with foil or parchment paper and set aside.
  2. Combine olive oil,  rosemary, paprika, onion powder and salt in a large bowl.
  3. Add almonds and toss with olive oil mixture until coated.
  4. Evenly spread almonds on lined baking sheet and place on middle rack in oven.
  5. Bake for about 15 minutes.
  6. Remove from oven. Sprinkle with additional salt if desired.
  7. Allow to cool and dry out a little for about 1 – 2 hours before storing in an air tight container.

For spicy almonds add 1/4 teaspoon cayenne pepper to the olive oil mixture.

I’m a bit conservative with salt in this recipe, and that’s why I suggest sprinkling additional salt after removing them from the oven.

Adapt this recipe for cashews, peanuts or your favorite mixed nuts combination.
