Lemon Squares Recipe
Lemon Squares have a light crumbly crust and a lemon filling that has just enough sweetness to satisfy.

Ingredients
  • 1cups flour
  • 1/2 cup unsalted butterroom temperature
  • 1/2 cup powdered sugar
  • 2 eggs
  • 1cup granulated sugar
  • 2tablespoons fresh squeezed lemon juice
  • 1teaspoon lemon zest
  • 1/2cup powdered sugarReserve For Glaze
  • 1teaspoon fresh squeezed lemon juiceReserve For Glaze
  • 1teaspoon waterReserve For Glaze
Instructions
  1. Preheat oven to 350ºF.
  2. Combine flour, butter and powdered sugar. Mix well and press into the bottom of a 8×8 square baking pan making sure the bottom of the pan is completely covered. Place in 350 oven for 15 minutes.
  3. While crust is baking mix together eggs, granulated sugar, fresh squeezed lemon juice and lemon zest. Pour mixture over crust and return to the oven for 25 minutes.
  4. Remove from oven and cool.
  5. Make a glaze by mixing sugar, lemon juice and water. Spread a thin layer of lemon glaze over the top of the lemon squares.
  6. Cut into squares and serve.
