Banana Nut Muffin Recipe (Gluten-Free Option)

  • 1cup granulated sugar
  • 1/2cup unsweetened applesauce
  • 1tbsp vegetable oil
  • 2 eggs
  • 1cup mashed bananas
  • 1-1/2cups all-purpose flour or gluten-free baking flour with xanthan gum
  • 1tsp ground nutmeg
  • 1tsp ground cinnamon
  • 2tsp hot water
  • 1tsp baking soda
  • 1tsp pure vanilla extract
  • 1/2cup chopped walnuts
  1. Pre-heat oven to 350°F. Grease muffin pan or use muffin liners. Recipe makes 12 to 18 muffins.
  2. Combine sugar, applesauce and vegetable oil
  3. Add eggs and mashed bananas, mix well
  4. Stir in flour, nutmeg and cinnamon
  5. In a separate small bowl dissolve baking soda in hot water, then add to banana mixture
  6. Add vanilla extract and chopped walnuts
  7. For over the top muffins fill muffin cups 3/4 full makes about 12 muffins, for regular size muffin fill muffin cups 1/2 full
  8. Optional top with additional chopped walnuts
  9. Bake for 18 to 20 minutes
