It’s important to make time for things we love. After the link up baby shower, for Cheryl at 40 Aprons earlier this week, I realized how much I truly enjoy cooking. I should be cooking more. The husband will nod enthusiastically when he reads that!
Mango Salad is one of my favorites this summer. I can’t get enough of the fresh mix of flavors especially mango and cilantro together. Yum!
Recipe for Mango Salad
- 2 mangos, cut into small chunks
- 3 green onions, thinly chopped
- 1 ½ cups grape tomatoes, sliced in half
- 2 avocados, cut into small chunks
- cilantro chopped
- juice of 1 lime
- 1 tbsp. champagne vinegar
- 1 tbsp. olive oil
- sea salt and fresh course cracked pepper to taste
Combine all ingredients and lightly toss. The recipe easily serves 4.
The salad looks beautiful plated on a bed of lettuce or served in small bowls. It will seriously compliment grilled shrimp or grilled pork tenderloin! Add corn-on-the-cob with herb butter or roasted corn and your guest will be delightfully satisfied.
We usually fight over any scraps left in the serving bowl.
