Mango Salad

It’s important to make time for things we love. After the link up baby shower, for Cheryl at 40 Aprons earlier this week, I realized how much I truly enjoy cooking. I should be cooking more.  The husband will nod enthusiastically when he reads that!

Mango Salad is one of my favorites this summer.  I can’t get enough of the fresh mix of flavors especially mango and cilantro together.  Yum!

 

Mango, tomatoes, green onions, avocado, cilantro, lime juice, champagne vinegar and olive oil

Recipe for Mango Salad

  • 2  mangos, cut into small chunks
  • 3  green onions, thinly chopped
  • 1 ½ cups grape tomatoes, sliced in half
  • 2 avocados, cut into small chunks
  • cilantro chopped
  • juice of 1 lime
  • 1 tbsp. champagne vinegar
  • 1 tbsp. olive oil
  • sea salt and fresh course cracked pepper to taste

Combine all ingredients and lightly toss. The recipe easily serves 4.

The salad looks beautiful plated on a bed of lettuce or served in small bowls.  It will seriously compliment grilled shrimp or grilled pork tenderloin! Add corn-on-the-cob with herb butter or roasted corn and your guest will be delightfully satisfied.
